INGREDIENTS:
- 5 eggs
- sweetener as desired (3 tablespoons of powdered erythritol or 2 tablespoons of powdered xylitol)
- 3 tablespoons of olive oil
- 70 g of almond flour
- baking powder
- 1 teaspoon of vanilla flavor
- 300 g of strawberries
- sweetener as desired (50 g of erythritol or 40 g of xylitol)
- 50 ml of water
- half of a squeezed lemon
- 3 spoons of cornstarch or 2 sheets od gelatine
- 350 ml of whipping cream
- sweetener as desired (120 g of powdered erythritol or 100 g of powdered xylitol)
- 1 teaspoon of vanilla extract
- 500 g of mascarpone cheese
- First separate the yolks from the whites. Beat the egg yolks and the sweetener together to a foamy texture. Then add olive oil and vanilla extract to the mixture, mix. Slowly add the dry ingredients. Beat the egg whites until stiff and manually whisk them into the previously obtained mixture. The ingredients are adapted for a mold with a diameter of 18 cm, so it would be best to separate the mixture into two parts in order to bake it more evenly. Bake for 15 to 20 min at 160˚ C.
- For the strawberry spread put all the ingredients in a pot and cook on low heat for about 15 minutes. Then, if you wish, you can grind everything with a stick mixer.
- Mix the mascarpone cheese together with the sweetener with a mixer. Then we add the vanilla extract and previously processed whipped cream. We mix everything together. The cream is ready to use.
