CAKE WITH VANILLA CREAM AND BANANAS

INGREDIENTS:

  • 5 eggs
  • 3 tablespoons of erythritol
  • 3 tablespoons of olive oil
  • 70 g of almond flour
  • 1x baking powder
  • 1 teaspoon of vanilla extract
  • 64 g of peanut butter
  • 2 tablespoons of erythritol powder
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of coconut oil
  • 300 ml of milk
  • 60 g of powdered erythritol
  • 1 vanilla sugar-free pudding (with erythritol)
  • 200 g of mileram
  • 500 ml of whipping cream (from milk fat)
  • 250 g of dark chocolate
  • 2 teaspoons of banana extract

Preparation:

  1. Separate the yolks from the whites. Mix the egg yolks and erythritol together to a foamy mixture. Then add olive oil and vanilla flavoring to the mixture, mix. Slowly add the dry ingredients. Mix the beaten egg whites slowly and by hand into the mixture. Bake for 15 to 20 minutes at 160 ˚C.
  2. Put peanut butter, powdered erythritol, coconut oil and vanilla in a saucepan and melt over low heat.
  3. Separate 100 ml of milk and mix it with the pudding. During this time, heat the remaining milk together with the erythritol. Stir until the mixture becomes thick. Add milleram to the hot mixture and mix until you get a mixture without lumps. Put the cream to cool. Before spreading on, mix once more to obtain a smooth mixture.
  4. Put chocolate and whipping cream in a saucepan and cook over low heat, stirring constantly. Stir until the chocolate is completely melted. Add banana extract and put it to cool.
