EASY PEANUT CAKE

INGREDIENTS:

  • 50 g of sugar-free vanilla pudding
  • 250 ml of milk
  • 70 g of coconut flour (not coconut crumbs)
  • 110 g of almond flour
  • 1 teaspoon of vanilla extract
  • 200 g of cream cheese
  • sweetener as desired (5 tablespoons xylitol powder or 6 tablespoons erythritol powder)
  • 3 tablespoons of peanut butter
  • 1 teaspoon of vanilla extract
  • 180 g of dark chocolate (I used stevia-sweetened)
  • 1 tablespoon of coconut oil

Preparation:

1. Cook the pudding according to the instructions on the bag and let it cool for ten minutes. Add coconut and almond flour to the pudding and mix everything together. After you have mixed everything together, transfer the finished mixture to the mold and let it cool for 15 minutes. The ingredients are suitable for a mold with a diameter of 18 cm.

2. For peanut cream put all the ingredients (cream cheese, sweetener, peanut butter and vanilla extract) in a bowl and combine with a mixer. Put the cream on the cooled base.

3. For the chocolate glaze melt chocolate and coconut oil together in steam and pour over the peanut cream. If desired, you can melt peanut butter and pour it over the chocolate for decoration. We cool everything together for about an hour.
