GALETTES WITH PLUMS

INGREDIENTS FOR THE DOUGH:

  • 140 g of butter
  • 130 g of almond flour
  • 130 g oat flour
  • sweetener as desired (2 tablespoons of erythritol or 1 tablespoon of xylitol)
  • grated zest of one lemon
  • a pinch of salt
  • 4 tablespoons of water
  • 1 teaspoon of vanilla flavoring

For the dough, mix all the ingredients into a compact mixture. Leave it in the fridge for about 30 minutes. During this time, prepare the filling.

INGREDIENTS FOR THE FILLING:

  • 100 g of cream cheese
  • sweetener as desired (40 g powdered erythritol or 30 g powdered xylitol)
  • 80 g of coarsely ground almonds
  • 1 teaspoon of vanilla flavoring
  • plums (8 bigger ones were enough for me)
  • egg for coating

Mix the cream cheese together with the sweetener. Add vanilla flavoring and coarsely ground almonds, mix. Then clean and cut the plums. Spread the cream cheese mixture on the rolled dough and start arranging the plums. Fold the edges over the filling and coat them with egg.

Bake at 180˚C for 30 min.
