HEDGEHOG COOKIES

INGREDIENTS:

  • 200 g of pyrrhic flour
  • 150 g of ground hazelnuts
  • a teaspoon of vanilla extract
  • 60 g of erythritol powder
  • 150 g of butter
  • 80 g of dark chocolate
  • a tablespoon of coconut oil
  • chopped almonds/choco crumbs

Preparation:

1. Mix all the ingredients. When the dough is well worked, wrap it in PVC foil and let it rest for 30 minutes in the fridge.

2. After removing the dough from the refrigerator, start forming small balls. Then we reshape the ball by slightly squeezing one part to get a shape that looks more like a pear or a teardrop.

3. Transfer the biscuits to a baking sheet. The biscuits are baked for 12 minutes at 180˚C.

4. After they are baked, leave them to cool. Meanwhile, melt the chocolate together with the coconut oil. Coat half of the cookie with chocolate and sprinkle with chopped almonds or chocolate crumbs. In the end, all that remains is to draw the eyes and muzzle, and this is easiest if we put the chocolate in a pastry bag.
