INGREDIENTS:
- 5 eggs
- 70 g of almond flour
- 3 tablespoons of olive oil
- 1x baking powder
- 1 teaspoon of vanilla extract
- 15 g of cocoa
- 4 tablespoons of powdered erythritol
- 250 g of mascarpone cheese
- 175 ml of whipping cream (from milk fat)
- 125 g of milk chocolate (with stevia or another sweetener)
- 30 g of powdered erythritol
- 250 g of mascarpone cheese
- 175 ml of whipping cream (from milk fat)
- 125 g of dark chocolate
- 50 g of powdered erythritol
- 200 g of sour cherries
- 50 g of erythritol
- 25 ml of water
- half of a squeezed lemon
- 1 tablespoon of corn starch


Preparation:
1.Separate the yolks from the whites. Mix the egg yolks and erythritol together. Add olive oil and vanilla extract to the mixture, mix. Slowly add the dry ingredients. Mix the beaten egg whites slowly and by hand into the mixture. Bake for 15 to 20 min at 160˚C.
2.Melt chocolate and let it cool. Mix mascarpone and erythritol and add the cooled chocolate to the cheese. When everything is well mixed, gradually add the whipped cream and mix by hand. Repeat the process twice, once with milk and the second time with dark chocolate.
3.Put everything in one pot (sour cherries, erythritol, water, corn starch and lemon juice) and cook on low heat for about 15 minutes. Then mix everything with a stick mixer.
