INGREDIENTS:
- 5 eggs
- 3 tablespoons of powdered erythritol
- 3 tablespoons of olive oil
- 70 g of almond flour
- 1x baking powder
- 1 teaspoon of vanilla flavor
- 5 egg yolks
- 100 g of erythritol
- 500 g of mascarpone cheese
- 250 ml of whipping cream

Preparation:
- Separate the yolks from the whites. Mix the egg yolks and erythritol together to a foamy mixture. Then add olive oil and vanilla flavoring to the mixture, mix. Slowly add the dry ingredients. Mix the beaten egg whites slowly and add into the mixture. Bake for 15 to 20 minutes at 160˚C.
- Mix egg yolks and sweetener together. Steam them until we get a solid mixture (about 10 minutes). Add the mascarpone cheese to the cooled mixture and mix. Leave the mixture aside and prepare whipping cream with vanilla. Then combine everything together.
- Before spreading the cream, soak layers with coffee to which we have added rum. You will need about 1.5 dl of coffee and I added a cap of rum.
