If you are a coffee and chocolate lover, these are perfect cookies for you. They are soft, they melt in your mouth and only take 30 minutes to make.

INGREDIENTS:
- 120 g of almond flour
- 50 g of coconut flour
- 20 g of cocoa powder
- sweetener as desired (110 g powdered erythritol or 90 g powdered xylitol)
- 2 tablespoons of instant coffee
- 2 tablespoons of milk
- 1 baking powder
- a pinch of salt
- 100 g of butter
- 2 eggs
- 1 teaspoon of vanilla extract
- 80 g of dark chocolate sweetened with sweetener
Preparation:
Beat the eggs together with the sweetener until the mixture doubles in size and becomes light. Meanwhile, melt the butter and let it cool for a few minutes. While the butter is cooling, mix the coffee with milk. Then add melted butter and coffee to the mixture of eggs and sweetener and mix with a mixer. Finally, add all the remaining dry ingredients and mix them in. Chop the chocolate and, if desired, add it to the mixture or on top of each ball.
Bake for 8 min at 180˚C. After baking, leave the cookies to cool on the baking sheet. From mixture you can get about 20 cookies.
