INGREDIENTS:
- 200 g oat flour
- 360 ml of milk (can also be plant-based)
- 2 eggs
- 1 tablespoon of powdered erythritol
- a teaspoon of grated lemon zest
- a tablespoon of rum and a tablespoon of vanilla extract (optional)

Preparation:
Mix all the ingredients together with a whisk or mixer. Since the oat flour will thicken the mixture over time, you can freely add a little more milk. Heat the pan well and go 🙂
This time I used peanut butter and melted dark chocolate for the filling, and you can do whatever suits you best with the crepes.
