CHEESECAKE BITES WITH APPLES

BASE:

  • 200 g of almond flour
  • 70 g of butter
  • 2 tablespoons of sweetener as desired (erythritol or xylitol powder)
  • 1 teaspoon of vanilla extract
  • a pinch of salt
  • coarsely ground almonds (amount as desired)

Mix the dry ingredients and, in the meantime, melt the butter. Pour the melted butter over the dry ingredients and mix. Transfer the resulting mixture into the mold and spread it out. Prick the dough with a fork before baking. Bake for 10 minutes at 180˚ C.

LAYER WITH APPLES:

  • 3 smaller apples
  • sweetener as desired (3 tablespoons of erythritol powder or 2 tablespoons of xylitol powder)
  • 2 dcl of water
  • 1 tablespoon of corn starch
  • juice of half a squeezed lemon

Peel the apples and cut them into small pieces. Put all the ingredients in a pot and cook on low heat. Cook until your apples are completely soft. If you wish, you can grind everything with a stick mixer.

CREAM CHEESE CREAM:

  • 400 g of cream cheese
  • 200 ml of whipping cream (from milk fat)
  • the tip of a teaspoon of cinnamon (if you have measuring cups, it’s 1/8 teaspoon)
  • 3 tablespoons of apple puree
  • sweetener as desired (4 tablespoons of powdered erythritol or 3 tablespoons of powdered xylitol)
  • 1 teaspoon of rum

Mix the cream cheese together with the sweeteners with a mixer. Add everything except the whipped cream to the resulting mixture. Work the cream with a mixer in a separate bowl and manually mix it into the cheese mixture.

Pour the apples over the almond flour base and refrigerate for about 30 minutes. Transfer the cream cheese mixture to the cooled apples and refrigerate everything together overnight. When everything is well cooled, cut it into cubes of the desired size and enjoy.
